HEALTHY CHICKEN STIR FRY
Sometimes it's hard to cook a healthy meal in a short time, especially with a busy family and work life. But what we have to remember is that there are no excuses when it comes to our health. You have to make the time no matter what, because this is our health we are taking about.
I know what being busy is like so sometimes I too take the easy way out, but there are always ways to cook healthy in a short amount of time. When I began my paleo journey about five years ago, I simply learned to combine foods really well to work for me and my family. A lot was trial and error for me and I've had some wins and some losses. I don't even want to think about some of the epic food fails I've had. My dogs wouldn't even eat it sometimes.
This recipe will take you about 30 minutes from start to finish because chicken cooks fast and the whole family will love it, regardless of the large amount of vegetables in it, because it's so tasty. The secret I think is the savoury yeast flakes I add.
Stir fry is one of the simplest dishes anyone can whip up so I hope you all enjoy my paleo take on it. I have so many garden vegetables growing right now that I simply use what's at hand when I go outside to harvest. Currently I have so much kale and zucchinis growing that I can't help but using it in lots of recipes. I still have to buy my root vegetables from an organic grocer but growing my own vegetables saves me so much money each week.
So now to give you the recipe, just follow it and you won't be disappointed.

-olive oil or coconut oil for cooking
-500 grams or 1 pound of organic chicken thighs
-2 large sweet potatoes
-handful of kale leaves
-one large zucchini
-4 cloves of crushed garlic
-1 large onion chopped
-cup of savoury yeast flakes or known as bakers yeast
-cup of home made sauerkraut or paleo approved store bought kraut
*caramelise the onion in the oil in a frying pan or wok
*dice up the root vegetables and bring them to the boil in a separate pot of water
*add the chicken to the onion and brown a little before adding the zucchini, kale and garlic and stir fry for about two minutes until the kale infuses in
*drain the boiled vegetable and add them to the mix together with all the spices, and stir well
*add the cup of bakers yeast and mix well and saute everything together for another few minutes
*add the cup of sauerkraut and stir fry all together for about another five minutes
*serve hot or it can also be eaten cold later
