This recipe is a keeper. Another accidental creation of mine that I am super proud of. It makes a wonderful main meal or even a side dish at barbecues. I made this dish for Australia Day celebrations this year and it was a real hit.
There are potatoes in it but on occasions I eat potatoes because paleo rules are slowly changing at times and potatoes are slowly sneaking back into the plan. Like anything we have, if it's in small doses and moderation, and if we can tolerate it, why not. If you're a strict paleo bunny, sometimes you just need that extra boost of carbs.
You can have the chicken in it or you can leave it out and have it as a complete vegetarian dish as well. And guess what!!! It is absolutely delicious and no one will complain. Not even the kids.
